Beef from South Bohemian farms arrives at your table after 48 hours of slow aging. The plum coulis comes from our own orchard in the Povltaví region — each jar hand-cooked in August to last the whole winter. The sauce simmers for 8 hours on low heat with bay leaf, whole peppercorns, and Frankovka red wine.

A kitchen that
knows its farmer by name

Every course on your plate has an address. Carrots from Třeboň, lamb from Šumava, cheeses from Mlékárna Klatovy. We don't care about stars — we care about the people behind every ingredient.

Salvia was founded in 2019 as a response to gastronomy that lost touch with the land. Chef Marek Vondráček grew up on a farm in the Pošumaví region — he knew what real fresh milk tasted like, how bread from the oven smelled, what it meant to take garlic from a string above the fireplace and slice it into scrambled eggs.

Today we work with 23 regular suppliers. We change the menu 4 times a year — always with the arrival of a new season. We freeze nothing. Fish arrive alive from Třeboň. Vegetables travel from the field directly to the kitchen within 48 hours of harvest.
„We cook as if the farmer's return next year depends on it."
Marek Vondráček — Executive Chef
The tasting menu is created every Friday afternoon — that's when the last deliveries arrive from the farms and Marek compiles the Saturday menu based on what has just ripened, what is at its peak flavor. It's a seven-act theater where the star is the ingredients — not the chef.

A chef who knows every field of his ingredients

Marek Vondráček grew up on a farm in the Pošumaví region. As a child, he planted potatoes, foraged mushrooms in the forest, and watched his mother preserve food. He studied gastronomy in Prague and Vienna, then worked for four years in Lyon at Michel Boudin's restaurant Léon.

In 2019, he returned to Bohemia with a single ambition: to build a restaurant where every ingredient has a name and an address. Salvia today collaborates with 23 local producers — from baker Milan Zástěra of Třeboň to winemaker Johanis Habánek of the South Moravian Region.

In 2025, Marek received the Golden Spoon award in the "Best Czech Cuisine" category. His philosophy is simple: "Hide the best technique. Let the ingredient be felt."
