Colour
Tilt the glass against the light. Young wine sparkles, mature wine turns brick or gold. The first clue of what awaits you.
Aroma
Smell before you taste. Fruit, flowers, spices, wood from the barrel — the nose recognises more than the tongue.
Swirl
Swirl the glass. The wine aerates, releases its aroma and shows 'legs' on the wall — a hint of body and alcohol.
Sip
Let a small sip pass through your entire palate. Feel the acidity, body and finish — how long the taste lingers.

We personally select wines from small vintners we know by name. No supermarket cartons — only what we stand behind. The cellar maintains a constant temperature and bottles are given time to mature.
